Five years with this easy drinking washed coffee. We look forward to this coffee landing on our cupping table each spring and enjoying it throughout the summer. A coffee that has built up quite the following - we are excited to have “B” back.
Like in past years, we find toasted sugar and cola - with just a hint of cardamon that has been keeping us on our toes.
Don Felipe along with his two sons Carlos and Leonardo, own and operate Finca Beatriz in beautiful Huehuetenango.
The farm sits at 1800 masl and they grow several varietals on site. The coffee received excellent cupping scores at origin and on our table. Don Felipe shows a curiosity in process techniques, drying times, the quality of his coffee, and how to get the most from his crop.
As our years purchasing this coffee have increased we have learned a little more as to why this washed coffee has such a frutiyness. Felipe’s fermentation tanks are unsealed concrete. It is our understanding that these baths have a kind of “memory” of coffee cherry. We think you can find it in the cup.
