This coffee certainly fits into that experimental fermentation category. Honey processed castillo undergoes a 72 hour anaerobic fermentation with strawberries and wine yeast. The results? An incredibly sweet and fruit forward coffee. We find Peach Preserves, Lemon, Lime, Toast, etc. Super complex stuff.
